ROASTED GARLIC GUACAMOLE
This is another one I came up with myself. Guacamole is good. Roasted garlic is good. So I said to myself, "self, what if you added the two together?" The answer is this excellent green goop that makes an amazing dip for quesadillas or nachos. Many people won't make guac because of the thinking required ahead of time to have ripened avocados. Here's a trick I picked up - if you've got avocados that need ripening just put them in a paper bag, seal it, and put it somewhere dry and room temperature. Anywhere between 12 and 24 hours you're going to have ripe avocados. Also note, anytime you're working with tomatoes I'd recommend you gut them and only use the hard portions, never the acidic liquid and seed inside.

Chop and mash your avocados to your preference (I like it pretty well mashed) and then add your three juices. Fold in the onion, garlic, and chili powder. Serve.
