THE ULTIMATE MARGARITA
Full credit for this goes to Bobby Flay and his Mesa Grill. When I visited New York City for the first time in November of 2001 with Alex and Steve I insisted we have dinner here. When we arrived it was a wait of 1.5-2 hours so we decided to chill out by the bar. I saw a sign on the wall noting they had won awards for their margaritas and decided to try one, as did the other boys. It was, hands down, the greatest thing I had ever drank - and I HAVE had Margaritas in Mexico. This thing was so good I bought some Jose Cuervo and decided I wouldn't rest until I had replicated it. The twist is in using Cointreau instead of the standard Triple Sec. You absolutely have to squeeze the juice out of fresh limes yourself if you want this to be right - the bottled stuff just won't cut it. Prepare the Margarita how you like them - I tend to prefer mine with crushed ice, but this sucker works quite nicely straight up as well. I dare you to have more than two...

Mix the Tequila, Cointreau, and lime juice in a shaker and shake thoroughly. Pour into a Margarita glass rimmed with kosher salt. Pour over ice or shake with crushed ice to your preference.
