CACTUS MARGARITA
I was shopping one day and noticed Prickly Pear Cactus in the fruits and veggies aisle. My mind spun around wondering what it would taste like, and for $0.50 I had nothing to lose. I bought one, brought it home and sliced it open. It's hard to define the taste - it's not too sweet, but sweet enough to resemble a fruit. That's when it occurred to me - what if I mixed this into the Ultimate Margarita? So that's essentially what I did - cut the lime juice in half, added a full shot of pureed Cactus and *BOOM*. Not only does this drink taste like heaven, it's one of the most visually attractive drinks you'll ever have. That said, to maintain the visual aspect of this drink (and cuisine is half visual) make sure you're using White Tequila, not Gold. 100% pure agave is required if you truly want this thing to sing.

Mix the Tequila, Cointreau, lime juice, and Cactus puree in a shaker and shake thoroughly. Pour into a Margarita glass rimmed with kosher salt. Pour over ice or shake with crushed ice to your preference.
